- 30 dag barley
- 2 liters water
- 1 tablespoon salt
- 1 clove garlic
- 1 bay leaf
- 1 tablespoon minced parsley
- 2 ribs chopped celery
- 1 chopped onion
- 2 sliced carrots
- 1 tomato
- dash pepper
- 2 tablespoon lard
- 2 tablespoon flour
- 1 cube broth
- 30 dag smoked meat
Preparation
- Place washed barley and smoked meat in salted water or broth and bring to a boil. Boil 60 minutes.
- Add garlic, parsley, celery , onion, carrots, bay leaf, tomato and pepper and cook until tender.
- Heat the lard, add flour and brown.
- Add to the barley mixture and simmer another 10 minutes. Care must be taken that it does not burn. If desired, you may add 1 cup of cooked navy or roman beans or 1 cup sauerkraut, last half hour of cooking.
